A quick and tasty pasta dish using our Dorset Air-Dried Beef. If you like Italian Bresaola then you are likely to enjoy our air-dried beef. We make it using the silverside of grass-fed PGI West Country raised beef.
We were so pleased when our air-dried beef won 2 Stars at the Great Taste Awards 2020. In particular, the judgest liked the beefy richness, salt, herbs with a long tasty finish.
Dorset Air-Dried Beef with Tagliatelle and Pesto
Capreolus Fine Foods
160 g Capreolus Air-Dried Beef (2 packs)
300 g dry tagliatelle
200g fresh pesto sauce
Parmesan for grating
Salt and black pepper
Cut the Dorset Air-Dried Beef into ½ cm (¼ inch) strips
Cook the tagliatelle in plenty of salted water according to the instructions until al-dente
Drain the pasta and return to the pan
Mix the pesto sauce into the drained pasta
Serve onto warmed plates and arrange the strips of Air-Dried Beef over the top of the pasta
Sprinkle with grated parmesan and black pepper to taste
