The Dorset Soft Salami is a soft spreadable, ready-to-eat, ambient pate-style salami inspired by Ventricina from the Abruzzo region of Italy.
We make our award winning soft salami with free range Dorset pork seasoned with a complex blend of herbs and little orange zest. The sausages are filled into natural hog casings before being fermented and air dried.
Treat it like a pate and spread it onto toast or a cracker. It could be used in many ways for your seasonal canapes.
The flavour is round, meaty and somewhat sweet with a hint of orange and a complex blend of herbs. It is slightly peppery but not hot.
The Dorset Soft Salami was awarded 3-Star status in the Great Taste 2021 awards

”...absolutely fascinating! This pale orange sausage has a soft spreadable consistency. On tasting on its own the flavours are all there as promised and as
you taste more flavours develop on the tongue. They keep on coming! The level of seasoning is good with a gentle bit of fire in the throat. This reminds us of Nduja. Eating it with toast brings out all those flavours - they are even more intense - how clever is that? We really enjoyed this product - congratulations!”
The Dorset Soft was the winner of Champion Cured Meat 2018 in the Taste of the West Awards. The judges said "An incredibly versatile salami. Spread it on bread or crackers - or eat it off the spoon! Packed full of flavour with delicious fennel notes. A highly innovative, utterly delicious rather moreish little fellow!"
The Dorset Soft Salami is made by hand using natural casings so weight and size may vary from salami to salami. We will never send you one that is less than 100g.
Ingredients: Pork, pork fat, salt, port, (SULPHITE), paprika, garlic, fennel, rosemary, orange zest, black pepper, white pepper, juniper berries. 130g pork used for 100g.
Preservatives: Sodium nitrite, Ascorbic acid.
