We have been lucky enough to find this astonishing six-year-old apple balsamic vinegar (made using over 50 varieties of apple grown in Dorset and Somerset).  This is made using the traditional Italian method of slow reduction, followed by six years' maturing in oak barrels, which results in a truly special apple balsamic with an amazing depth of flavour.  We love this extraordinary vinegar because it works so well with charcuterie and salads (it would be wonderful in a cassoulet using our duck confit) - just a few drops are sufficient for an apple-rich flavour.
