Inspired by the flavours of Italy we blend free range pork with salt, sweet wine, fennel and a hint of chilli. As always it is loaded into natural beef casings before being fermented and air-dried. The fennel comes through first and is followed by a tingle from the chilli at the end; it makes an excellent snack on its own or can be enjoyed as part of a charcuterie platter. Try with a 'Big' red wine (or a West Country Cider), some olives and crusty bread. - A delicious initial taste of fennel after an aroma of fennel on the nose. The wine and chilli begin to show, developing and growing - warming not harsh. Tingle is the right word! The fat melts away and the meat carried the flavours very well. Clean in flavour, not muddied by any stale notes and very fresh chilli too. The lingering flavours are very good.
